Creamy Black Bean Soup
Ingredients
2 tablespoon(s) Olive oil
1 Onion, Chopped rough
4 clove(s) Garlic, Chopped rough
2 Jalapenos, Seeded and chopped
1 teaspoon Ground cumin
4 cups Cooked black beans
3 1/2 - 4 cups Chicken stock
1 Lime
1/2 cup Plain non-fat yogurt, Greek if available
Cilantro, Chopped
Green onion, Chopped and sauteed
Jack cheese, Shredded
Directions
Heat a large pot over medium high heat. Add the oil and sweat the onion for 4-5 minutes. Add the garlic, jalapeno, cumin, beans, chicken stock and yogurt and bring to a simmer. Let simmer for 5 minutes and transfer to a blender. Puree the soup until smooth and then return the pot over medium heat. Season the soup to taste with salt, peeper a,d fresh lime juice.
The soup is wonderful as is or you can top it with sour cream, cheese, cilantro, and/or green onions. Serve with freshly cooked flour tortillas for dipping.
