Agnus White's Mincemeat Cookie Bars

A White holiday Tradition
Ingredients
1 jar Mincemeat, Not brandied-too strong
1-2 cans Applesauce, They use 2
2-3 tablespoons Corn starch, Mixed in small amount of water
1 batch Pie dough, Your favorite - divided enough to cover your pan twice
1 batch Icing
2 cups Powdered sugar
2 tablespoons Butter
Water, Enough to stir and blend
Directions
- Combine mincemeat and applesauce together, add cornstarch mixture and heat until thickened. Cool.
- Line a cookie sheet with half the uncooked pie dough, some must hang over the edges for sealing top to bottom later, - pour the above mixture into this. Spread evenly.
- Over this put another layer of pie dough to cover the entire mixture, seal the edges and discard any left over dough.
- Bake at 400 degrees until nicely browned. Remove from oven.
- While this is baking- mix powdered sugar, butter and enough water to stir and blend (don't make it too thin). Pour over the still hot cookie mixture, when it comes out of the oven. Spread and cover the entire top layer. 6.Cool - cut into squares & enjoy !
